How to Freeze Strawberries

Learn how to freeze strawberries so you can enjoy their fresh flavor for months. This easy method is perfect for preserving strawberries from your garden, a U-pick farm, the farmers market, or a grocery store sale.

Equipment

  • Baking sheet
  • Parchment paper (optional)
  • Paper towels or a clean tea towel (optional)
  • Colander or large bowl
  • Freezer zip-top bags or airtight freezer containers
  • Permanent marker for labeling
  • Paring knife or strawberry huller
  • Vacuum sealer (optional)

Instructions

Step 1: Wash the Strawberries

  • Rinse the strawberries under cool running water to remove any dirt or debris.

Step 2: Remove the Stems

  • Hull the strawberries by removing the green stems and leaves using a huller or paring knife. Leave them whole or slice them, depending on how you plan to use them.

Step 3: Choose Your Freezing Method

    Option 1: Flash Freeze (Best Method)

    • Arrange the strawberries in a single layer on a parchment-lined baking sheet. Freeze for 2–4 hours, or until completely frozen. Once frozen solid, transfer the strawberries to freezer zip-top bags or airtight containers. Remove as much air as possible before sealing, label with the date, and return them to the freezer.

    Option 2: Freeze Without Flash Freezing (Faster Method)

    • If you'd like to save time, spread the strawberries on a baking sheet lined with paper towels or a clean tea towel and let them air dry for a little bit. Once they're completely dry, place them directly into a freezer zip-top bag or airtight container. Remove as much air as possible before sealing, label with the date, and freeze. Keep in mind that the strawberries will freeze together somewhat, so you may need to break them apart when you're ready to use them.

    Notes

    For the best quality, use within 12-18 months.
