Making homemade vanilla extract is surprisingly simple and requires just two ingredients. This large batch recipe uses vodka and vanilla beans to create rich, flavorful pure vanilla extract that's perfect for from-scratch baking, cooking, and thoughtful homemade gifts.

- 2 1.75-liter bottles plain vodka (80 proof/40% alcohol)
- 50 Madagascar vanilla beans or your favorite variety of vanilla bean
Using kitchen scissors, carefully split each vanilla bean lengthwise, leaving about ½ inch at one end intact so the bean stays together.
Place the vanilla beans into a 1-gallon glass jar or divide them evenly between two ½-gallon Mason jars.
Pour the vodka over the vanilla beans, making sure they are completely submerged.
Secure the lid tightly and gently shake the jar.
Label the jar with the date it was made.
Store the jar in a cool, dark cabinet or pantry.
Shake the jar every month or two while it ages. If you forget to shake it occasionally, don't worry—it will still develop a wonderful flavor.
After about 3 months, the extract will have a light vanilla flavor. Around 6 months, it's ready for everyday baking. For the richest, most complex flavor, allow it to age for 9 to 12 months before using.
Use plain vodka that is at least 80 proof (40% alcohol). A cheap vodka works perfectly—there's no need to buy a premium brand since the vanilla beans provide the flavor.
