These mini cheesecakes are a delicious, classic bite-size dessert. I remember eating these in my childhood, except back then they were made with a box of graham crackers, a can of cherry pie filling, and probably Cool Whip topping. A lot has changed in my eating habits since then, so I definitely needed to make some modifications in order to make these cheesecakes gluten-free, refined sugar-free, and made with real food ingredients.

Making these from scratch does take a little more effort but trust me they are well worth it. You can make the different components of the recipe ahead or at different times, so the recipe can be flexible with your schedule. I usually make the graham crackers a day or so ahead of time. The berry sauce topping can be made a day ahead as well, so don't get overwhelmed with the extra steps, it's a very flexible recipe!

While you're already doing all of the work to make these, you might want to go ahead and double it! They disappear quickly and leftovers can be frozen. I've taken these to a family gathering and they were even loved by the family members who eat gluten and the "normal" sweet treats. For the Crust

  • Gluten-free graham cracker crumbs – These create a classic cheesecake crust with a sweet, slightly crunchy texture.   • Cream cheese – The foundation of the filling, providing the rich, creamy texture. I try to find brands that have the least amount of gums/stabilizers.

How to Make Gluten-Free Mini No-Bake Cheesecakes

Prepare the Crust

To make the graham cracker crust, we first need to crush the graham crackers into crumbs (unless you've purchased graham cracker crumbs to start, then you could skip this step). You can place the graham crackers in a Ziplock bag and crush them using a rolling pin or you could place them into a food processor. *Note- If you make homemade graham crackers and you followed the recipe that I linked to, you will use the whole batch of graham crackers. If you purchased graham crackers, then you will need 2 and 3/4 cups of crumbs or 390 grams.

Place the crushed graham cracker crumbs and the melted butter in a bowl and stir until combined.

Line your muffin tins with cupcake liners.

Fill the cupcake liners with about 1 and 1/2 tablespoons of the graham cracker mixture. Press and pack the mixture down firmly, using either your fingers or the back of a spoon.

This next step is optional. You can move right onto filling your crusts with the cheesecake mixture if you want to. But, a quick 5-minute bake in the oven does help the crusts become a little bit firmer, and they hold together a little bit better. To do this bake them at 350°F for 5 minutes. Let them cool completely before filling them with the cheesecake mixture.

Prepare the Filling

    In a large bowl, using a hand mixer or stand mixer beat the softened cream cheese until smooth.

    Add the maple syrup, vanilla, lemon juice, and sour cream or Greek yogurt and beat until combined and smooth.

    In a separate bowl, use the hand mixer or stand mixer and whip the heavy cream until soft peaks form.

    Add the whipped cream to the cream cheese mixture and gently fold it in using a spatula or wooden spoon until no white streaks remain. Be careful not to overmix and deflate the whipped cream.

    Assemble the Cheesecakes

      Keep the crusts in the muffin tins and pipe or spoon about 4 to 5 tablespoons of the filling into the crusts. To pipe it in, you could use a piping bag or use a Ziplock bag and cut the corner off.

      Chill

        Place the cheesecakes in the refrigerator (leave in the muffin tins) and chill for at least 3 hours or overnight.

        Top and Serve

          After the cheesecakes have chilled, remove them from the muffin pan and right before serving, top the mini cheesecakes with berry sauce or fresh fruit and serve!
